Pizza cooking tips

Preheating the oven
. Temperatures should be 300’C - beware as temps can get much hotter
. Use plenty of dry wood to create the desired temperature
. Check the temperature between cooking pizzas and add wood as necessary
Cooking
. Leave the oven door open for pizza cooking
. Place the pizza in the middle, directly onto the stone base
. Keep the burning embers to the sides of the oven
. Rotate the pizza
. Pay attention, the pizza will be cooking in a few minutes
Serving
. Serve immediately whilst hot
. Enjoy!

Bread cooking tips

Preheating the oven
. Place wood and heat up the oven to 400’C + and let cool to 150-180’C (can be as low as 100-120’C)
. Or after you have cooked pizza!
. Remove embers from oven


Cooking
. Close the oven door open for bread baking
. Place the bread in the middle of the oven directly on stone or use a baking tray
. Leave for 3-4 minutes before opening the door to allow crust to form
. Rotate the bread - be as quick as possible to stop heat escaping
Serving
. Colour with give an indication of if the bread is cooked but also turn bread over and tap the base - a hollow sound shows it is cooked or more heavy or dense sound it is not cooked
. Allow to stand and cool before eating

Roasting tips

Preheating the oven
. After getting the heat up, allow to drop to 200’C for roasting
. Move wood to one side to maintain heat and add wood regularly to keep desired temperature



Cooking
. High heat in the wood oven allow great browning and sealing
. Keep wood burning gently throughout the cooking
. For shorter roasting times the door can left open, whilst for longer roasting times the door can be closed to maintain temperature
Serving
. Check the temperature of the meat with a good thermometer
. When cooked allow to stand before serving

Grilling tips

Preheating the oven
. After getting the heat up, allow to drop to 300’C for rgrilling
. Move wood to one side to maintain heat and add wood regularly to keep desired temperature



Cooking
. High heat in the wood oven allow great browning and sealing
. Keep the wood burning well to one side of the oven
. Grill using cast iron pans and skillets

. Rest most meats for a few minutes before serving
